Important to allow theses roots to reach a depth of 1 foot minimum, with silty sandy, non-compacted soil. For this reason, do not harvest in the first year or two to allow these plants to become well established. With this being said once you do harvest them ou will be well pleased. Well established plants can produce spears that look like hockey sticks! It's best to harvest spears when they are around 10-12 inches long.
